Corinne's Potato Salad

Corinne and I have been friends for most of our lives.
We met in grade one.
Many years ago we went on a picnic together
and she brought this salad along.
It was YUMMY!
She graciously shared the recipe with me and it has been
my "go to" potato salad ever since.
Everyone loves it ~ I'm sure you will too!
The "secret" ingredient is the pickles...
don't leave them out! :)

Corinne's Potato Salad

4 Hard Boiled Eggs ~
cooled and chopped into chunks

6 Large New Potatoes (Red or Yellow) boiled ~
cooled and chopped into chunks

4 Green onions ~ chopped

5 Red Radish ~ minced

5 Dill Pickles ~ chopped

Put all above ingredients into a large mixing bowl.
Mix and pour over top the following dressing ~

1 cup Miracle Whip
(Or your own homemade mayonnaise)
1 1/2 Tbsp Prepared Mustard
1 Tbsp White Vinegar
Salt and Pepper ~ to taste

Mix together and spoon into a serving bowl.
Refrigerate and serve chilled.
Sprinkle with Paprika to make it look pretty.
Enjoy!

Bargain Books!

Although I am always book collecting, I've been on a mission this summer to find great "new" books for my class library! The challenge has been to do this on a budget, and I have discovered that if I look in the right places, there are so many cheap books out there! I am so pumped about my finds so far, I just had to share!
I found all of these at a thrift store for $3.00!!! Some of them are brand new!

I found these at the Friends of the Homewood Library bookstore for $3.00!

Other places I find great books for super cheap:
*TJ Maxx
*Ross
*Home Goods
*Sale section of Books-a-Million (It's always a huge section, and they have amazing deals!)
*Kohls (I love when they have the book and matching stuffed buddy for $5 each!)
*Scholastic Book Clubs (Love the book orders, but they even have a warehouse sale in Birmingham a few times a year!)

Challenge No. 13 - Sketch Challenge

Phew, we have been absolutely bowled over by the sheer volume of entries we had for the last challenge.  I do hope you stick with us for this challenge which has a sketch to follow.  As usual with sketches, feel free to rotate or skew it however you like, so long as we can see the connection to the sketch it's fine.

Our sponsor for this challenge is the fabulous Meljen's Designs.  Please visit Melissa's shop and take a look at her images.  They really are wonderful and lovely to work with.

The winner will be able to choose 4 digis from Meljen's Designs.  Here's some inspiration from our Design Team.  Hope you like them....

This is going to be Viv's last challenge.  I'm sure you'll all agree that she's going to be greatly missed.  Best of luck for the future, Viv.

So there you have it.  Hope that's got some ideas flowing.  The challenge will close at midnight BST (British Summer Time) on 4th July 2010 and the rules are

1. The card must be for a man/boy.
2. You need to follow the theme/sketch that is set.

3. It must be a new card.

Leave your name and a direct link to your entry (not just to your blog) in Mr Linky below.  If Mr Linky is not there for some reason then leave the details in the comments and I'll add you in when I'm doing the draw.

"Everyday" Blessings

Thanksgiving ought to be a year-round event ~
a daily exercise...
a way of life.

If we profess to belong to the LORD,
we are to bear the fruit of thankfulness.

Is it difficult?
Sometimes.

Is it rewarding?
Always!

Is it a burden?
Never.

As my list of thanks grows, I become more aware of the
MANY blessings in the "everyday".
And the numbering continues...I'm over half way!

The challenge was to reach 1000.

I anticipate the desire will be to continue counting,
numbering ~ joy-finding.

It is addicting.
